Today has been an okay day. I worked ALL day on a paper on Islamic Extremism (fun, right?) and am now working on the video project (can't wait til it's all over.. man!)

I ate okay today. I didn't track but ate reasonably until dinner, haha. Since I am going vegan (for next week at least) I did decide to indulge in dairy... I had Shells and Cheese and a milkshake. Ha, well it made me feel terrible an hour or so after consuming >.<

I did go to the grocery store today and made a video about my grocery haul on YouTube so check it out! Also, does anyone have any vegan-friendly recipes with lentils? These things are nutritional gods! 11 grams of fiber and 10 grams of protein in just half a cup! Oh man!

Ha, so on that note, I'm going to be working on this paper til all hours of the night. Have a wonderful rest of the day and I will give an update tomorrow on the vegan eating!

Well, if those shells and cheese made you sick then you are doing the right things to cut out dairy.....do you think you are lactose intolerant anyway?

Going to check out your haul now....I will check in my new books for recipes......

I cook Lentils quit often. They are very easy to make. The water to lentil ratio is like rice. One cup lentil to two cups water.
All they need for flavor is onion and a bay leaf. Some people add carrots. They usually need extra salt like most legumes, use sea salt, it is less salty tasting.
They freeze great if you make too much.
They are high in calories so don't eat more than a cup.
The Greeks squeeze a bit of lemon on them. I like it that way too.
BTW, they cook pretty fast, they are not like dried beans, they cook to mush if you cook them to long.
1/2 hour to 45 min.is about all they need.

Wash them before cooking.
Next time buy the French red ones.
Yummy.
